- Makisu (sushi mat – make sure to wrap it in food service film)
This recipe will make approximately 6-8 rolls.
Crawfish, also interchangeable with Crayfish, are typically farmed in ponds in the United States and have very few negative environmental impacts.
In most instances, no feed is added to crawfish aquaculture farms, but minimal amounts of fertilizer is used to support the food web that crawfish feed off of.
Disease and parasite problems are rare in crawfish. But in the event that an outbreak occurs, preventative practices result in NO chemical use in the industry.
Being that crawfish are native to the United States, the negative impact of escape from the aquaculture farms are minimal. The annual water change is also regulated and therefore has a little to no environmental impact.
Due to not being predatory towards fish, crawfish have almost no mercury in them. This makes them safe for women who are pregnant or breast feeding if cooked correctly. Though, you should speak to your physician about nutrition specifications before consuming.

Be sure to check out the link above to learn how to make the Crawfish Salad.
1. Using a half sheet of nori, apply a thin layer of rice horizontally and sprinkle some sesame seeds along the center.
2. Flip over your rice and seaweed and put a thin line of crawfish salad (no larger than 2cm in diameter).
3. Next, add a few pieces of cucumber on the far side of the crawfish and a few pieces of avocado on the side closest to you (adding squishy ingredients on the side closest to you will make the rolling process easier).
4. Now you are ready to roll! Slide your thumbs under the makisu and use your fingers to hold the ingredients in place while you roll from bottom to top. For more detailed instructions on how to roll, click on How to Roll Sushi.
5. Once you’ve rolled it all up it’s time to cut. Like with most standard Uramaki, you want to cut the roll into 8, even pieces.
6. Congratulations! You have successfully made a Florida Roll. Now you can plate your roll with a little bit of ginger and wasabi. Enjoy!
